Ingredients

12 oz penne pasta

1 lb Italian sausage (choose either sweet or spicy)

2 tbsp olive oil, divided

1 medium onion, thinly sliced

2 bell peppers (one red and one yellow), sliced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes with their juices

1/2 cup chicken broth or a splash of white wine

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional, for heat)

Salt and freshly ground black pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Instructions

Cook the Pasta: Start by filling a large pot with water, adding a generous amount of salt, and bringing it to a rolling boil. Carefully add the penne pasta and cook according to the package instructions until al dente, usually around 10-12 minutes. Once ready, drain the pasta, but be sure to reserve about 1 cup of the pasta cooking water for later use.

Cook the Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage to the pan, using a spatula to break it up as it cooks. Sauté until the sausage is browned and completely cooked through, about 6-8 minutes. Once done, remove the sausage from the skillet and set it aside on a plate.

Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Introduce the thinly sliced onion and bell peppers to the pan. Sauté the vegetables, stirring occasionally, for about 5-7 minutes, until they become tender and start to caramelize. Add the minced garlic and continue to sauté for another minute, just until the garlic becomes aromatic and fragrant.

Combine Ingredients: Return the cooked sausage to the skillet with the sautéed vegetables. Pour in the diced tomatoes (with their juices), followed by the chicken broth or white wine. Sprinkle in the Italian seasoning and the red pepper flakes if you enjoy a little extra heat. Stir everything together until well combined, then reduce the heat and let it simmer for about 5-10 minutes, allowing the flavors to meld beautifully.

Mix in the Pasta: Add the cooked penne pasta to the skillet with the sausage and vegetables. If the mixture appears too dry, gradually add small amounts of the reserved pasta water, a few tablespoons at a time, until you achieve your desired sauce consistency. Toss everything together to ensure the pasta is evenly coated with the sauce.

Season to Taste: Before serving, taste the pasta dish and, if necessary, season with salt and freshly ground black pepper to enhance the flavors.

Serve: Remove the skillet from the heat. Plate the pasta and garnish generously with fresh basil leaves and a good sprinkling of grated Parmesan cheese. Enjoy this flavorful and colorful pasta dish with family and friends!
