Ingredients

12 oz (340g) penne pasta

1 tablespoon extra-virgin olive oil

4 cloves garlic, finely minced

1 small onion, finely diced

1 can (14 oz) diced tomatoes, with juices

2 cups vegetable broth (or chicken broth if preferred)

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional for added spiciness)

½ cup heavy cream (or coconut cream for a vegan alternative)

1 cup shredded mozzarella cheese (or vegan cheese substitute)

Salt and freshly ground black pepper, to taste

Fresh basil leaves for garnish (optional)

Grated Parmesan cheese for serving (optional)

Instructions

Sauté Aromatics: In a large pot or deep skillet, heat the extra-virgin olive oil over medium heat. Once hot, add the diced onion and sauté for about 3-4 minutes until it turns translucent. Then, add the minced garlic and continue to sauté for another minute until fragrant, taking care to avoid burning the garlic.

Combine Ingredients: Pour in the diced tomatoes along with their juices, followed by the vegetable broth. Add the dried basil, dried oregano, and optional red pepper flakes. Stir thoroughly to integrate all the ingredients.

Cook Pasta: Introduce the penne pasta to the pot, stirring well to ensure it's fully submerged in the liquid. Increase the heat to medium-high and bring the mixture to a vigorous boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 12-15 minutes, or until the pasta achieves an al dente texture. Stir occasionally to prevent the pasta from sticking.

Make it Creamy: After the pasta is cooked to your liking, remove the pot from the heat. Stir in the heavy cream and shredded mozzarella cheese, mixing until the cheese has melted and the sauce is creamy and cohesive. Season with salt and freshly ground black pepper to taste.

Serve: Carefully divide the creamy tomato penne into individual bowls. Enhance the presentation by garnishing each serving with fresh basil leaves and a sprinkle of grated Parmesan cheese, if desired.

Enjoy: Serve immediately while hot, and savor the comforting flavors of this easy one-pot meal!
