Ingredients

1 lb beef steak (ribeye or sirloin, thinly sliced against the grain)

2 tablespoons olive oil

1 medium onion, thinly sliced

1 medium green bell pepper, thinly sliced

1 cup mushrooms, sliced (optional for added earthiness)

Salt and freshly ground black pepper, to taste

4 hoagie rolls (preferably fresh)

4 slices provolone cheese (or substitute with Cheez Whiz for a traditional twist)

1 tablespoon Worcestershire sauce

Optional toppings: sliced hot peppers, mayonnaise

Instructions

Prepare the Beef: If your steak is not pre-sliced, place it in the freezer for about an hour to firm it up for easier slicing. Once partially frozen, slice it thinly against the grain to ensure tenderness. Set aside.

Cook the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the thinly sliced onions and sauté for about 3 minutes until they begin to soften. Then, add the green bell peppers and sliced mushrooms (if using). Continue cooking, stirring occasionally, for 5-7 minutes until all the vegetables are tender. Season with salt and freshly ground black pepper. Once done, remove the vegetables from the skillet and keep warm.

Cook the Steak: In the same skillet, raise the heat to medium-high. Add the thinly sliced steak, season with salt and pepper, and drizzle the Worcestershire sauce over the meat. Cook for about 4-5 minutes, stirring occasionally, until the steak is well browned and cooked to your preference.

Combine: Once the steak is cooked, add the cooked vegetables back to the skillet. Stir everything together and heat for an additional minute to marry the flavors, ensuring that the steak and vegetables are evenly distributed.

Melt the Cheese: Preheat your broiler. Split the hoagie rolls open and arrange them on a baking sheet, cut side up. Place an even amount of the steak and vegetable mixture onto each roll. Top each with a slice of provolone cheese. Broil in the oven for 2-3 minutes, or until the cheese is melted and starts to bubble.

Serve: Remove from the oven and add your choice of optional toppings, such as sliced hot peppers or a drizzle of mayonnaise. Serve immediately while hot and gooey.
