200g pork tenderloin or pork shoulder, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

2 tablespoons vegetable oil (divided)

2 large eggs, lightly beaten

1 cup frozen peas and carrots (or your choice of mixed vegetables)

3 green onions, chopped (white and green parts separated)

2 cloves garlic, minced

Salt and pepper to taste

Optional: sesame seeds for garnish

Marinate the Pork: In a mixing bowl, combine the sliced pork, soy sauce, and oyster sauce. Toss to coat the pork evenly and let it marinate for at least 15 minutes. This step enhances the flavor and tenderness of the meat.

    Prepare the Rice: If using freshly cooked rice, spread it out on a baking tray or large plate to cool completely and allow it to dry slightly. This prevents the rice from getting mushy when fried. If you have day-old rice, it’s perfect to use straight from the fridge.

      Scramble the Eggs: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the lightly beaten eggs and scramble gently until they are just set but still slightly soft. Remove from the pan and set aside in a bowl.
