Ingredients

2 cups cooked jasmine rice (preferably chilled, ideally prepared a few hours or the day before)

1 lb medium shrimp, peeled and deveined

1 cup frozen peas and carrots mix

2 tablespoons vegetable oil (divided)

3 cloves garlic, minced

2 large eggs, beaten

3 tablespoons soy sauce (adjust to taste)

1 tablespoon sesame oil

2 green onions, finely chopped

Salt and pepper to taste

Optional: a drizzle of sriracha or your favorite hot sauce for added heat

Instructions

Preparation: Begin by ensuring your jasmine rice is properly chilled. This step is crucial as cold rice prevents clumping during frying. If you haven't cooked your rice yet, consider making it several hours before or the day in advance to achieve the best texture.

Cook the Shrimp: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the peeled and deveined shrimp to the skillet, seasoning them lightly with salt and pepper. Cook the shrimp for about 2-3 minutes on each side, or until they are pink and opaque. Once cooked, remove the shrimp from the skillet and set aside.

Scramble the Eggs: Using the same skillet, add the remaining tablespoon of vegetable oil. Introduce the minced garlic and sauté for about 30 seconds or until fragrant, taking care not to burn it. Pour in the beaten eggs and scramble them for 1-2 minutes until they are fully cooked. Once done, push the scrambled eggs to one side of the skillet.

Combine Ingredients: On the empty side of the skillet, add the frozen peas and carrots, mixing them in with the scrambled eggs. Then, add the chilled, cooked rice to the skillet, breaking apart any clumps and ensuring an even mixture throughout.

Season the Rice: Drizzle the soy sauce and sesame oil over the rice mixture. Stir continuously while mixing to ensure every grain is evenly coated. Gently incorporate the cooked shrimp back into the skillet and mix until everything is well combined. Take a moment to taste the fried rice and adjust the seasoning with additional salt, pepper, or soy sauce as necessary.

Garnish and Serve: Once everything is heated through, turn off the heat and sprinkle the chopped green onions on top for added freshness and color. Serve your delightful shrimp fried rice immediately. If desired, place a small bottle of sriracha or your favorite hot sauce on the table for those who enjoy an extra kick.
