Easy Vegetable Stir-Fry with Tofu and Rice

1 block (14 oz) firm tofu, drained and pressed

2 tablespoons soy sauce (plus additional for serving)

1 tablespoon sesame oil

1 tablespoon olive oil

1 red bell pepper, sliced into thin strips

1 cup broccoli florets (fresh or frozen)

1 cup snap peas, trimmed and cleaned

1 medium carrot, cut into julienne strips

2 cloves garlic, minced

1-inch piece of fresh ginger, grated

2 green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

2 cups cooked rice (white, brown, or jasmine)

Salt and pepper to taste

Prepare the Tofu: Cut the pressed tofu into 1-inch cubes and place them into a medium bowl. Drizzle 2 tablespoons of soy sauce over the tofu and gently toss to coat the cubes evenly. Set aside to marinate for about 10 minutes while you prep the vegetables.

    Cook the Rice: If you do not have pre-cooked rice, prepare it according to the package instructions. Aim to cook the rice simultaneously with the stir-fry to ensure everything is ready at the same time.

      Sauté Tofu: In a large skillet or wok, heat both the sesame oil and olive oil over medium-high heat until they shimmer. Carefully add the marinated tofu cubes, cooking them for about 6-8 minutes. Turn them occasionally until they are golden brown on all sides. Once cooked, remove the tofu from the skillet and set it aside on a plate.

        Stir-fry the Vegetables: In the same skillet, add the minced garlic and grated ginger, sautéing for approximately 30 seconds until fragrant. Following this, add the sliced red bell pepper, broccoli florets, snap peas, and julienned carrot. Stir-fry the vegetables for 4-5 minutes, or until they become crisp-tender and vibrant in color.

          Combine and Toss: Return the browned tofu back into the skillet with the vegetables. If you prefer additional flavor, drizzle in a bit more soy sauce. Gently toss everything together for another 2-3 minutes to ensure all the ingredients are well-combined and heated through.

            Serve: On four serving plates, divide the cooked rice evenly. Spoon the vibrant vegetable and tofu stir-fry generously over the rice. Finish by garnishing with chopped green onions and a sprinkle of sesame seeds for added texture and flavor. Adjust the taste with salt and pepper as needed.
