Ingredients

1 medium eggplant, sliced into 1/2-inch rounds

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

2 large ripe tomatoes, sliced into rounds

8 ounces fresh mozzarella cheese, sliced

1/4 cup fresh basil leaves, gently torn

4 slices of sourdough or ciabatta bread

Balsamic glaze, for drizzling

Optional: 1/2 teaspoon garlic powder or 1 clove minced garlic for added flavor

Instructions

Prep the Eggplant: Start by sprinkling the eggplant slices generously with salt. Allow them to sit for about 10 minutes; this process helps draw out excess moisture and bitterness. Afterward, rinse the slices under cool water to remove excess salt, then pat them dry thoroughly with a paper towel.

Grill the Eggplant: Preheat a grill pan or outdoor grill to medium heat. Brush both sides of each eggplant slice with olive oil and season with freshly cracked black pepper (and garlic powder or minced garlic, if using). Grill each eggplant slice for approximately 4-5 minutes on each side, until they are beautifully charred and tender. Once done, remove them from the grill and let them cool slightly.

Assemble the Sandwich: Take one slice of your bread and layer it with grilled eggplant, tomato slices, fresh mozzarella, and torn basil leaves for a burst of flavor. Drizzle a small amount of balsamic glaze over the top layers to enhance the taste, and then top with another slice of bread to complete the sandwich.

Grill the Sandwich: Heat a skillet over medium heat and add a splash of olive oil or use cooking spray to coat the pan. Once the oil is shimmering, carefully place the assembled sandwich in the skillet. Grill for about 3-4 minutes per side, until the bread is golden brown and the cheese inside is melting. For even cooking, you can place a heavy skillet or a weight on top of the sandwich.

Serve: After grilling, remove the sandwich from the pan and slice it in half for easier handling. Drizzle with additional balsamic glaze if desired. Serve hot and savor the delightful combination of flavors in this vegetarian masterpiece!
