Juice of 1 lime (about 2 tablespoons)

For the Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup carrots, grated or shredded

1/4 cup fresh cilantro, chopped

1/4 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon honey

Salt and freshly ground black pepper, to taste

For Assembly:

8 small corn or flour tortillas

Lime wedges, for serving

Additional cilantro, for garnish

Sliced jalapeños (optional)

Marinate the Shrimp: In a medium-sized bowl, whisk together the olive oil, chili powder, ground cumin, garlic powder, lime juice, and a pinch of salt and pepper. Add the peeled and deveined shrimp, making sure each piece is well-coated with the marinade. Allow the shrimp to marinate for 10-15 minutes, while you prepare the slaw.

    Prepare the Slaw: In a large mixing bowl, combine the finely shredded green cabbage, red cabbage, grated carrots, and chopped cilantro. In a separate small bowl, mix the mayonnaise, apple cider vinegar, honey, and a sprinkle of salt and pepper. Whisk until the dressing is smooth and creamy.
