Ingredients

1 pound ground turkey

2 cups stale bread, cubed

1 cup vegetable broth

1/2 cup dried cranberries, chopped

1/2 cup celery, finely chopped

1/2 cup onion, finely chopped

1/4 cup walnuts or pecans, chopped (optional)

1 teaspoon garlic powder

1 teaspoon dried sage

1/2 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1 large egg, beaten

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.

Sauté the Vegetables: In a medium skillet, add a splash of olive oil and heat over medium. Once the oil is shimmering, add the finely chopped onion and celery. Sauté for about 5 minutes, stirring occasionally until the vegetables are soft, tender, and translucent. Once done, remove the skillet from heat and set aside.

Prepare the Mixture: In a large mixing bowl, combine the ground turkey, cubed stale bread, sautéed vegetables, chopped dried cranberries, and nuts (if using). Sprinkle in the garlic powder, dried sage, dried thyme, salt, and black pepper. Slowly pour the vegetable broth into the mixture, stirring as you go until the ingredients are moist but still capable of holding their shape. Finally, add the beaten egg and mix everything together until uniformly combined.

Form the Balls: Using your hands, scoop out about 2 tablespoons of the mixture and roll it into a ball shape. Repeat this process, placing each ball on the prepared baking sheet until all of the mixture is formed into balls.

Bake: Transfer the baking sheet to your preheated oven. Bake for 25-30 minutes, or until the stuffing balls are golden brown and have cooked through, reaching an internal temperature of 165°F (74°C).

Garnish and Serve: Once baked, remove the stuffing balls from the oven and allow them to cool for a few minutes. Just before serving, garnish with freshly chopped parsley to add a touch of color and freshness.

Enjoy these delightful and festive cranberry turkey stuffing balls as a scrumptious side dish or appetizer at your holiday gathering!
