1 ½ pounds boneless, skinless chicken breasts, sliced into thin strips

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

Juice of 2 limes (approximately ¼ cup)

Zest of 1 lime

Salt and freshly ground black pepper to taste

1 red bell pepper, sliced into thin strips

1 green bell pepper, sliced into thin strips

1 medium onion, sliced into thin rings

Fresh cilantro, chopped, for garnish

Marinate the Chicken: In a large mixing bowl, combine the chicken strips with 2 tablespoons of olive oil, the chopped jalapeños, minced garlic, ground cumin, smoked paprika, chili powder, lime juice, lime zest, salt, and pepper. Mix thoroughly to ensure every piece of chicken is coated with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the flavors to meld. For an even richer taste, marinate for up to 2 hours.

    Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet or a cast-iron pan over medium-high heat.
