Ingredients

1 lb fresh shrimp, peeled and deveined

1/4 cup cornstarch

2 tablespoons vegetable oil

1/4 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to your spice preference)

2 teaspoons freshly squeezed lime juice

1 teaspoon garlic powder

Salt and pepper, to taste

1 head of butter lettuce or iceberg lettuce, carefully leaves separated

1/4 cup green onions, finely chopped

1/4 cup fresh cilantro, roughly chopped

Sesame seeds (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Shrimp: Begin by placing the peeled and deveined shrimp in a mixing bowl. Sprinkle the cornstarch over the shrimp and gently toss until each piece is evenly coated. This coating will help create a delightful crispiness once cooked.

Make the Spicy Sauce: In a separate bowl, combine the mayonnaise, sweet chili sauce, sriracha, lime juice, garlic powder, and a pinch of salt and pepper. Whisk the mixture until it's smooth and fully blended. Taste and adjust the level of sriracha according to your preference for heat, then set the sauce aside.

Cook the Shrimp: Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is shimmering, carefully add the coated shrimp in a single, even layer. Cook the shrimp for about 2-3 minutes on each side, or until they turn a beautiful golden brown and are cooked through. Once done, remove the skillet from heat.

Assemble the Lettuce Cups: Take a butter lettuce leaf and place it on a serving plate. Spoon a few crispy shrimp pieces into the center of the leaf, ensuring they’re well-distributed.

Garnish: Generously drizzle some of the spicy sauce over the shrimp. Then, top with a sprinkle of chopped green onions and cilantro for freshness and flavor. For an added crunch and visual appeal, finish off with a sprinkle of sesame seeds.

Serve: Arrange the filled lettuce cups neatly on a large serving platter. Serve with lime wedges on the side to squeeze over the cups for an extra burst of zesty flavor.
