Ingredients

2 cups Greek yogurt (choose plain or vanilla based on your preference)

1 cup fresh blackberries (plus extra for garnish)

2 tablespoons honey or maple syrup (adjust according to your desired sweetness)

1 teaspoon vanilla extract (optional, but adds depth of flavor)

1 tablespoon lemon juice

A pinch of salt for balance

Silicone ring mold (or any round mold you have available)

Instructions

Prepare the Blackberry Mixture: In a blender or food processor, combine the fresh blackberries, honey or maple syrup, lemon juice, and a pinch of salt. Blend until you achieve a smooth consistency, leaving a few small chunks if you prefer a bit of texture in the final product.

Mix the Yogurt: In a separate mixing bowl, gently stir together the Greek yogurt and vanilla extract (if you’re using it) until completely blended. Taste the mixture and add more honey or maple syrup if you like it sweeter.

Layering the Mixtures: You have two options here! For a layered effect, spoon a layer of Greek yogurt into each section of the silicone mold, followed by a layer of the blackberry mixture. Repeat this process until the molds are filled, finishing with the yogurt on top. If you prefer a swirled look, alternate spoonfuls of the yogurt and blackberry mixtures in the molds, then gently swirl them together using a skewer or small knife to create a marbled effect.

Add Garnish: To enhance visual appeal, place a few extra blackberries on top of each yogurt ring before freezing. This adds a lovely touch of color.

Freezing: Once filled, cover the molds with plastic wrap or a lids to prevent freezer burn, and place them in the freezer. Allow them to freeze for at least 4-6 hours or until they are completely solid.

Unmold and Serve: After freezing, let the molds sit at room temperature for a few minutes to make removal easier. Gently pop the yogurt rings out of the molds. Serve immediately or store them in an airtight container in the freezer for a delightful treat later!

Optional Serving Suggestion: For an extra touch of sweetness before serving, drizzle a bit of honey over the top of the yogurt rings or accompany them with a dollop of additional Greek yogurt for a creamy contrast.
