Ingredients

2 cups fresh or frozen blueberries

1 cup coconut yogurt (choose dairy-free or regular)

1/2 cup shredded unsweetened coconut

2 tablespoons honey or maple syrup (adjust according to your sweetness preference)

1 teaspoon vanilla extract

1/4 cup chopped nuts (optional: choose almonds, walnuts, or pecans)

A pinch of sea salt

Instructions

Prepare the Blueberries:

    - If using fresh blueberries, wash them thoroughly under cold running water and gently pat them dry with a clean towel.

      - If using frozen blueberries, allow them to sit at room temperature until they are partially thawed and slightly soft, making blending easier.

        Make the Base Mixture:

          - In a medium-sized mixing bowl, combine the coconut yogurt, your choice of honey or maple syrup, vanilla extract, and a pinch of sea salt.

            - Whisk or stir with a spoon until the mixture is smooth and all ingredients are well blended together.

              Blend the Blueberries:

                - Place the blueberries in a blender or food processor. Pulse the berries until they achieve a smooth puree while still maintaining some blueberry chunks for added texture.

                  - If desired, set aside a few whole blueberries to fold into the mixture later for a delightful surprise.

                    Combine Ingredients:

                      - Gently fold the blueberry puree into the coconut yogurt mixture using a spatula. Ensure everything is evenly mixed.

                        - If you set aside any whole blueberries, add them in now, along with the chopped nuts (if using), and give it a light stir to distribute them throughout the mixture.

                          Prepare the Mold:

                            - Take a mini muffin tin or silicone mold and line it with paper liners or lightly grease it with coconut oil to prevent the bites from sticking.

                              Fill the Molds:

                                - Carefully pour the blueberry-coconut mixture into each mold section, filling them about three-quarters full.

                                  - Gently tap the tin against the counter to eliminate any air bubbles and to level the mixture within the molds.

                                    Add Coconut Topping (Optional):

                                      - For an added decorative touch, sprinkle shredded coconut over the top of each filled mold.

                                        Freeze the Bites:

                                          - Place the mold in the freezer and allow it to set for at least 2-3 hours, or until the bites are completely solid.

                                            Serve:

                                              - Once fully frozen, remove the bites from the molds by gently pulling them out, or use a butter knife to carefully loosen the edges.

                                                - Enjoy immediately or transfer them to an airtight container and store in the freezer for up to one month.

                                                  Thaw Before Eating (Optional):

                                                    - If you prefer a creamier texture, let the bites sit out at room temperature for 5-10 minutes before indulging.

Prep Time, Total Time, Servings: 15 minutes | 3 hours (including freezing) | Makes 12 bites

                                                        - Presentation Tips: Serve the bites on a decorative platter lined with fresh mint leaves for an appealing presentation. Consider topping them with a drizzle of honey or a few extra blueberries for an elegant touch.
