2 cups rolled oats

1 cup frozen cherries, pitted and halved

1/2 cup almond butter (or your preferred nut butter)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon salt

1/4 cup shredded coconut (optional)

1/4 cup chopped nuts (such as almonds or walnuts, optional)

Instructions
 

Prepare the Base: In a large mixing bowl, combine the rolled oats and salt. If you're using shredded coconut or chopped nuts for added texture, include them at this stage. Stir until everything is evenly mixed.

    Blend Wet Ingredients: In a separate bowl, whisk together the almond butter, honey (or maple syrup), and vanilla extract. Mix well until you achieve a smooth and creamy consistency.

      Combine Mixtures: Pour the wet ingredient mixture over the dry oat mixture. Gently stir until all ingredients are well combined and the oats are fully coated with the almond butter mixture.

        Add Cherries: Carefully fold in the halved frozen cherries, ensuring they are evenly distributed throughout the mixture without breaking them apart.

          Shape the Clusters: Line a baking sheet with parchment paper to prevent sticking. Using a spoon or a small ice cream scoop, drop spoonfuls of the mixture onto the prepared baking sheet. Press each cluster down slightly to help them hold their shape.

            Freeze the Clusters: Place the baking sheet in the freezer. Allow the clusters to freeze for approximately 1 to 2 hours, or until they are solid and firm to the touch.
