Ingredients

1 cup unsweetened shredded coconut

1 cup chilled coconut cream

1/2 cup maple syrup or honey (your choice)

1 teaspoon pure vanilla extract

1/4 teaspoon sea salt

1 cup mixed berries (fresh or frozen; strawberries, blueberries, and raspberries work well)

1/4 cup chopped almonds or walnuts (optional for added crunch)

Zest of 1 lime (for a bright, refreshing zing)

Instructions

Prepare the Base: In a spacious mixing bowl, mix together the unsweetened shredded coconut, chilled coconut cream, maple syrup (or honey), vanilla extract, and sea salt. Stir until all ingredients are well combined, resulting in a smooth, creamy mixture.

Layer the Mixture: Take an 8x8 inch (20x20 cm) baking dish and line it with parchment paper, ensuring you have some overhanging edges for easy removal later. Pour half of the coconut mixture into the prepared dish and spread it evenly to create a solid base layer.

Add the Berries: Evenly scatter your chosen mixed berries over the coconut base. If you’re using frozen berries, make sure they are distributed evenly across the surface, pressing them down slightly to secure them into the layer.

Top it Off: Spoon the remaining coconut mixture over the berries, spreading it out to completely cover them. Lightly tap the dish on the countertop to eliminate any air pockets and ensure a firm layering.

Add Crunch (optional): If you opted for nuts, sprinkle the chopped almonds or walnuts over the top layer. Press down gently to help the nuts stick.

Zest it Up: Finish off by sprinkling the freshly grated lime zest over the top layer, enhancing the dish with a refreshing citrus flavor.

Freeze: Cover the dish with plastic wrap or its lid, then place it in the freezer. Let it freeze for a minimum of 4 hours, or until it is completely solid and firm.

Slice and Serve: Once fully frozen, remove the dish from the freezer and lift the coconut berry squares out using the parchment paper overhang. Cut into squares and enjoy immediately, or store in an airtight container in the freezer for later indulgence.

Garnish (optional): For an extra special touch, serve each square with a drizzle of coconut cream or an additional sprinkle of lime zest just before serving.
