1/2 cup unsweetened shredded coconut (optional, for added texture)

Prepare the Mango Mixture: In a high-speed blender, add the diced mangoes, coconut milk, honey (or agave syrup), vanilla extract, and sea salt. Blend on high until the mixture is completely smooth and creamy, ensuring there are no chunks remaining.

    Incorporate Coconut for Texture (Optional): If you enjoy added chewiness in your popsicles, stir in the unsweetened shredded coconut into the blended mango mixture until well combined.

      Fill the Popsicle Molds: Carefully pour the mango-coconut mixture into popsicle molds, leaving a small gap at the top to allow for expansion as the mixture freezes. For a layered effect, fill each mold halfway, freeze for approximately 30 minutes, then sprinkle a bit of shredded coconut before filling the molds to the top with the remaining mixture.

        Insert Popsicle Sticks: Once the molds are filled, insert the popsicle sticks into the center of each mold. Ensure that the sticks are standing upright and are evenly spaced.
