Ingredients

2 large pink grapefruits

1 cup freshly squeezed grapefruit juice (sourced from the grapefruits)

1 cup chilled sparkling water

1/4 cup honey or agave syrup (adjust based on sweetness preference)

Zest of 1 grapefruit

Fresh mint leaves, for garnishing

Optional: tonic water for an extra fizz

Instructions

Prepare the Grapefruits: Slice the grapefruits in half horizontally. Use a spoon to gently scoop out the sections of the fruit, ensuring you leave the skin intact to serve as cups. Reserve the flesh and set the emptied grapefruit shells aside.

Blend the Juice: Transfer the scooped grapefruit flesh into a blender and blend until completely smooth. To create a silky juice, strain the blended mixture through a fine-mesh sieve into a bowl. Discard any pulp left in the sieve.

Mix the Ingredients: In a large mixing bowl, combine the freshly squeezed grapefruit juice, your choice of honey (or agave syrup), and the zest of one grapefruit. Stir the mixture thoroughly until the sweetener has fully dissolved.

Add Sparkle: Gradually pour in the chilled sparkling water, stirring gently to maintain the carbonation. Take a moment to taste the mixture, adjusting the sweetness by adding more honey if desired.

Fill the Cups: Carefully pour the grapefruit sparkle mixture into the prepared grapefruit halves, filling them right to the edge. Place the filled grapefruit cups in a tray to keep them stable.

Freeze: Cover the tray with plastic wrap and transfer it to the freezer. Allow the cups to freeze for a minimum of 4 hours or until they are solid throughout.

Serve: Once ready to serve, take the Frozen Grapefruit Sparkle Cups out of the freezer. Let them sit for about 5 minutes at room temperature to soften slightly. Using a fork, gently scrape the surface of the frozen mixture to create a light, granita-like texture.

Garnish: Finish each cup with a sprig of fresh mint and, if desired, add a splash of tonic water for an additional layer of fizz before serving. Enjoy this refreshing and vibrant treat!
