Frozen Strawberry Cheesecake Bites

1 cup fresh strawberries, hulled and halved

8 oz cream cheese, softened at room temperature

1/2 cup powdered sugar

1 tsp pure vanilla extract

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted and slightly cooled

1/4 cup mini chocolate chips (optional)

Fresh mint leaves for garnish (optional)

Prepare the Strawberries: Rinse the fresh strawberries under cold water to clean them thoroughly. Remove the green tops by hulling, then slice each strawberry in half. Set the prepared strawberries aside for later use.

    Make the Cheesecake Filling: In a large mixing bowl, use an electric mixer to beat the softened cream cheese on medium speed until it is smooth and creamy, about 2-3 minutes. Gradually sift in the powdered sugar while continuing to mix, ensuring the mixture is well combined. Finally, add the vanilla extract and beat for an additional minute until the filling is light and fluffy.

      Create the Crust Mixture: In a separate medium bowl, combine the graham cracker crumbs with the melted butter. Using a fork, stir until the crumbs are fully moistened and the mixture resembles wet sand.

        Assemble the Bites: Line a mini muffin pan with cupcake liners for easy removal. For each cupcake liner, take about one tablespoon of the crust mixture and firmly press it into the bottom to create a solid base.
