2 cups fresh or frozen strawberries, hulled

8 oz cream cheese, softened to room temperature

½ cup powdered sugar (adjust to taste)

1 tsp pure vanilla extract

1 cup Greek yogurt (choose plain or vanilla flavored)

¼ cup crushed graham crackers

2 tbsp unsalted butter, melted

Pinch of sea salt

Popsicle molds and sticks

Prepare the Strawberry Puree: For fresh strawberries, wash them thoroughly, remove the hulls, and chop them into smaller pieces. If using frozen strawberries, allow them to thaw slightly. Blend the strawberries in a blender or food processor until smooth. Set aside the strawberry puree.

    Make the Cheesecake Mixture: In a large mixing bowl, use an electric mixer to beat the softened cream cheese until it’s smooth and creamy. Gradually incorporate the powdered sugar, mixing until fully combined and free of lumps.

      Add Yogurt and Flavor: Stir in the vanilla extract and Greek yogurt, mixing until the mixture is smooth and homogeneous. Taste the mixture and, if desired, add more powdered sugar for additional sweetness.

        Prepare the Crust Layer: In a separate small bowl, combine the crushed graham crackers, melted butter, and a pinch of sea salt. Mix until the ingredients are well combined to create a flavorful crust.

          Layer the Pops: Start by spooning about one tablespoon of the graham cracker mixture into the bottom of each popsicle mold. Press down gently with the back of a spoon to form a firm crust layer.

            Add Cheesecake Filling: Carefully spoon or pipe the cheesecake mixture over the graham cracker layer until each mold is filled about halfway.

              Incorporate Strawberry Puree: Spoon the strawberry puree over the cheesecake layer, filling to about three-quarters full. Use a toothpick or skewer to create swirls and marbling for a beautiful effect.

                Top with Cheesecake Mixture: Add the remaining cheesecake mixture on top of the strawberry puree, filling each mold nearly to the brim.

                  Insert the Sticks: Gently insert popsicle sticks into the center of each mold, ensuring they are upright and centered.

                    Freeze: Place the molds in the freezer and allow them to freeze for at least 4-6 hours, or until completely solid.

                      Unmold and Serve: Once fully frozen, run warm water gently over the outside of the molds for a few seconds to loosen them. Carefully pull the pops from the molds.

                        Garnish (optional): For an elegant touch, dip the tops of the pops in melted chocolate, then sprinkle with additional crushed graham crackers. Alternatively, drizzle with extra strawberry puree before serving.
