2 cups fresh strawberries, hulled and chopped into small pieces

2 ripe kiwis, peeled and sliced into thin rounds

1 cup coconut yogurt (or Greek yogurt for a tangier taste)

1 cup coconut water (or your choice of fruit juice such as apple or orange)

2 tablespoons honey or maple syrup (adjust based on your preferred sweetness)

1 tablespoon freshly squeezed lime juice

1 teaspoon vanilla extract

Optional: fresh mint leaves for a decorative garnish

Prepare the Base: In a high-powered blender, add the chopped strawberries, sliced kiwis, coconut yogurt, coconut water, honey (or maple syrup), lime juice, and vanilla extract. Blend on high until the mixture is smooth and well combined, ensuring there are no lumps.

    Taste and Adjust: After blending, taste the mixture to determine if it meets your sweetness preference. If you find it needs a bit more sweetness, add an additional teaspoon of honey or maple syrup, blend briefly to combine, and taste again.

      Layer Your Pops:

        - For an attractive layered effect, pour half of the smoothie mixture into the popsicle molds.

          - Next, evenly distribute slices of strawberries and kiwi on top of the first layer for added texture and color.

            - Carefully pour the remaining smoothie mixture over the fruit layers, filling each mold to the top without overflowing.

              Insert Sticks: Gently place popsicle sticks into the center of each mold, ensuring they are positioned straight and secure.

                Freeze: Place the filled popsicle molds in the freezer. Allow them to freeze for at least 6 to 8 hours, or until they are completely solidified.

                  Unmold and Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds, which helps loosen them. Carefully pull the popsicles out and serve immediately. For an extra touch, garnish with fresh mint leaves.
