4 cups of seedless watermelon, roughly cubed

1/4 cup of freshly squeezed lime juice (from 2-3 limes)

2 tablespoons of honey or agave syrup (adjust based on sweetness of watermelon)

A pinch of salt

Optional: Lime zest from 1 lime for an added zing

Prepare the Watermelon: Begin by chopping the seedless watermelon into uniformly-sized cubes. Place the watermelon cubes into a blender and blend on high speed until the mixture is completely smooth, ensuring there are no large pieces remaining. You should achieve about 4 cups of smooth watermelon puree.

    Combine Ingredients: In the blender with the watermelon puree, add the freshly squeezed lime juice, honey or agave syrup, a pinch of salt, and the lime zest if you choose to use it. Blend again until all components are thoroughly combined, and the mixture is silky in texture.

      Taste Test: Before transferring the mixture into molds, taste it to see if the balance of sweetness and tartness is to your liking. If you feel it needs more sweetness, add an additional tablespoon of honey or agave syrup. For extra tartness, mix in a bit more lime juice. Blend again briefly to incorporate any additional ingredients.

        Pour into Molds: Carefully pour the mixed watermelon-lime mixture into popsicle molds. Make sure to leave a small gap at the top of each mold to allow for expansion as the popsicles freeze. If there’s any leftover mixture, you can pour it into ice cube trays to create refreshing summer ice cubes.

          Insert Sticks: If your popsicle molds require popsicle sticks, insert the sticks into the center of each filled mold. If your molds come with a lid, place it snugly on top to hold the sticks in position while freezing.

            Freeze: Place the filled molds in the freezer and let them freeze for a minimum of 4 to 6 hours, or until the popsicles are completely solid.

              Unmold: To release the popsicles, run warm water over the outside of the molds for about 30 seconds, or gently pull the sticks to free them. Enjoy the refreshing popsicles immediately!
