Ingredients

2 cups plain Greek yogurt

1/4 cup honey or maple syrup

1/4 cup almond butter

1 tablespoon pure vanilla extract

1/4 cup poppy seeds

1/2 cup slivered almonds

1/4 teaspoon sea salt

1/2 cup fresh or frozen blueberries (optional)

1/4 cup unsweetened shredded coconut (optional)

Instructions

Prepare the Base: In a large mixing bowl, combine the plain Greek yogurt, honey (or maple syrup), almond butter, pure vanilla extract, and sea salt. Use a whisk to mix these ingredients together until the mixture is smooth, creamy, and well-blended.

Incorporate the Dry Ingredients: Gently fold in the poppy seeds and slivered almonds into the yogurt mixture, making sure they are evenly distributed. If you choose to include blueberries or unsweetened shredded coconut, gently fold those into the mixture as well to enhance the flavor and texture.

Line the Pan: Take an 8x8 inch square baking dish (or a similar-sized pan) and line it with parchment paper. Make sure to leave some overhang on the sides to facilitate easy removal later.

Spread the Mixture: Pour the yogurt mixture into the lined baking dish. Use a spatula to evenly spread the mixture across the surface, smoothing the top for a professional finish.

Freeze Until Firm: Cover the dish tightly with plastic wrap or a lid, then place it in the freezer. Allow it to freeze for at least 4-6 hours or until the mixture is completely firm and set.

Slice into Bars: Once the mixture is fully frozen, remove the dish from the freezer. Lift the frozen mixture out of the pan using the overhang of the parchment paper. Place it on a cutting board and slice into bars or squares of your desired size.

Serve and Store: You can enjoy the bars immediately, or if you're not ready to eat them all at once, store the bars in an airtight container in the freezer. For a softer texture, let the bars sit at room temperature for a few minutes before serving.
