Ingredients

2 ripe bananas

2 cups plain Greek yogurt

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/2 cup walnuts, chopped (substitute pecans if desired)

Pinch of salt

Optional: 1/2 cup mini chocolate chips for added sweetness

Instructions

Prepare the Bananas: In a mixing bowl, use a fork to mash the ripe bananas until smooth, leaving a few small chunks for texture.

Combine Ingredients: To the bowl with the mashed bananas, add the Greek yogurt, honey or maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Mix thoroughly until the mixture is well combined and creamy.

Add Walnuts: Gently fold in the chopped walnuts and, if desired, the mini chocolate chips, ensuring they are evenly distributed throughout the mixture.

Line the Pan: Take an 8x8 inch baking dish (or a similar-sized container) and line it with parchment paper. Make sure to leave some overhang for easy removal after freezing.

Pour and Spread: Carefully pour the yogurt mixture into the prepared dish. Use a spatula to spread it out evenly and smooth the top to create a flat surface.

Freeze: Cover the dish with plastic wrap or a lid, and place it in the freezer. Let it freeze for at least 4-6 hours, or until it is completely solid.

Slice and Serve: Once frozen, lift the mixture out of the dish using the parchment paper overhang. Cut into bars of your preferred size. For a neater cut, allow it to sit at room temperature for a few minutes before slicing.

Store Extra: Any leftover bars can be stored in an airtight container in the freezer. Enjoy these refreshing bars chilled!
