Once you've combined your ingredients to create the granola mixture, it’s time to bake. Preheat your oven to 350°F (175°C) and spread the mixture evenly on a lined baking sheet. The baking time is crucial; aim for around 20-25 minutes. Start checking at the 20-minute mark. The granola should turn a delicious golden-brown color, which indicates it's properly toasted.

Ingredients

2 cups rolled oats

1 cup unsweetened shredded coconut

1/2 cup almond slivers (or your favorite nuts)

1/2 cup honey (for a vegan option, use maple syrup)

1/4 cup coconut oil, melted

1 cup Greek yogurt (or dairy-free yogurt for a vegan version)

1 teaspoon vanilla extract

1/4 teaspoon salt

Optional: 1/2 cup dark chocolate chips or dried fruits (like cranberries or raisins)

Instructions

Preheat the Oven: Set your oven to 350°F (175°C). Prepare an 8x8 inch baking pan by lining it with parchment paper, allowing some overhang for easy lifting later.

Prepare the Granola Mixture: In a large mixing bowl, combine the rolled oats, shredded coconut, almond slivers, and salt. Stir thoroughly to ensure all dry ingredients are well mixed.

Incorporate Liquid Ingredients: In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract until well blended. Pour this wet mixture into the bowl of dry ingredients, stirring everything together until the oats are evenly coated.

Bake the Granola: Spread the granola mixture into the prepared baking pan, pressing it down firmly and evenly to create a solid layer. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown. Once done, remove from the oven and let the mixture cool completely in the pan.

Prepare the Yogurt Layer: While the granola cools, sweeten your Greek yogurt by mixing it with a drizzle of honey or maple syrup, adjusting the sweetness to your liking.

Assemble the Bars: Once the granola base has cooled, evenly spread the yogurt mixture over the top. If you like, sprinkle dark chocolate chips or dried fruits on the yogurt layer, gently pressing them in for better adhesion.

Freeze the Bars: Carefully place the assembled bars into the freezer and let them set for at least 2 hours to ensure they firm up nicely.

Cut and Serve: After freezing, lift the bars out of the pan using the parchment paper overhang. Cut them into the desired bar size. Enjoy immediately or store in an airtight container in the freezer for up to one month.
