Ingredients

3 cups fresh or frozen peaches, sliced

2 tablespoons light brown sugar

1 teaspoon ground cinnamon

1 tablespoon freshly squeezed lemon juice

1 cup Greek yogurt (plain or peach-flavored)

1 cup vanilla or almond milk

1/4 cup honey or maple syrup (optional, for additional sweetness)

1 teaspoon pure vanilla extract

2 cups granola or oat crumble (store-bought or homemade)

Fresh mint leaves, for garnish (optional)

Instructions

Prepare the Peaches: If using fresh peaches, rinse them thoroughly, peel the skin, and slice them into bite-sized pieces. In a mixing bowl, combine the sliced peaches with light brown sugar, ground cinnamon, and lemon juice. Gently toss until the peaches are evenly coated and allow the mixture to marinate for about 10 minutes to enhance the flavors.

Blend the Yogurt Mix: In a separate bowl, whisk together the Greek yogurt, vanilla or almond milk, and honey or maple syrup (if you prefer a sweeter treat). Continue whisking until the mixture is smooth and creamy. Taste and adjust the sweetness as desired for your palate.

Layer the Ingredients: Take a 9x9-inch square baking dish (or similar size) and begin by layering half of the granola or oat crumble at the bottom. This will form a crunchy base for your dessert. Next, evenly distribute half of the marinated peach mixture over the granola.

Add Yogurt Layer: Carefully pour half of the yogurt mixture over the peaches, using a spatula to spread it evenly, ensuring all the peach slices are covered.

Repeat the Layers: Add the remaining granola or oat crumble on top of the yogurt layer. Then, spoon the remaining peach mixture over the crumble. Finally, pour the last of the yogurt mix on top, spreading it to cover the entire layer.

Freeze: Cover the baking dish tightly with plastic wrap or aluminum foil. Place it in the freezer and allow it to freeze thoroughly for a minimum of 4-6 hours or until completely set.

Slice and Serve: Once frozen, take the dish out of the freezer and let it sit at room temperature for about 5 minutes. This will make slicing easier. Cut into squares and, if desired, garnish each square with fresh mint leaves for a pop of color.

Enjoy: Serve these Frosty Peach Cobbler Bliss Squares as a delightful and refreshing dessert on a warm day, perfect for satisfying your sweet tooth!
