Ingredients

2 cups plain Greek yogurt

1 cup pumpkin puree (canned or fresh)

1/2 cup maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/2 cup crushed graham crackers (for crust)

2 tablespoons melted butter or coconut oil

Whipped cream (for topping)

Optional: chopped pecans or walnuts for garnish

Instructions

Prepare the Graham Cracker Crust:

    - In a medium mixing bowl, combine the crushed graham crackers with the melted butter (or coconut oil). Stir until all crumbs are thoroughly coated and resemble wet sand.

      - Evenly distribute the mixture into the bottom of 8 small cups or ramekins, pressing down firmly with the back of a spoon to create an even crust layer. Set aside while you prepare the filling.

        Make the Pumpkin Yogurt Mixture:

          - In a separate mixing bowl, combine the Greek yogurt, pumpkin puree, maple syrup, vanilla extract, ground cinnamon, ground nutmeg, ground ginger, and salt. Stir until the mixture is smooth and well-blended.

            - Taste the mixture and adjust the sweetness by adding more maple syrup, if desired, to achieve your preferred flavor.

              Swirl the Mixtures:

                - Using a tablespoon, scoop the pumpkin yogurt mixture and layer it on top of each crust in the cups. Fill each cup until they are about 2/3 full.

                  - With a butter knife or toothpick, gently swirl the pumpkin yogurt mixture to create a marbled pattern. Be careful not to mix it completely; you want the distinct layers to show.

                    Freeze:

                      - Place the cups carefully in the freezer, ensuring they are upright. Allow them to freeze for at least 4 hours, or until fully solid.

                        Serve:

                          - Before serving, remove the cups from the freezer and let them sit at room temperature for about 5 minutes to soften slightly, making them easier to scoop.

                            - Top each cup with a generous dollop of whipped cream and sprinkle with chopped nuts, if desired, for added texture and flavor.

                              - Enjoy your deliciously refreshing Frozen Yogurt Pumpkin Pie Swirl Cups!
