Ingredients

For the Crust and Crumble:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup packed brown sugar

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon salt

For the Pumpkin Spice Frozen Yogurt:

2 cups plain Greek yogurt

1 cup pumpkin puree

½ cup honey (or maple syrup for a vegan alternative)

2 teaspoons pumpkin pie spice

1 teaspoon vanilla extract

Pinch of salt

For the Topping:

½ cup chopped pecans or walnuts (or a mix of both)

¼ cup mini chocolate chips (optional)

Instructions

Prepare the Crust:

    - Begin by preheating your oven to 350°F (175°C).

      - In a medium mixing bowl, combine graham cracker crumbs, melted butter, brown sugar, ground cinnamon, ground nutmeg, and salt. Stir thoroughly until the mixture resembles wet sand.

        - Transfer the mixture into a greased 9x9 inch baking dish. Using your hands or the back of a measuring cup, press the crust mixture firmly into the bottom to create an even layer.

          - Bake the crust in the preheated oven for 10 minutes, then remove it and allow it to cool completely.

Make the Pumpkin Spice Frozen Yogurt:

              - In a large mixing bowl, combine the Greek yogurt, pumpkin puree, honey (or maple syrup), pumpkin pie spice, vanilla extract, and a pinch of salt. Mix well until the mixture is smooth and fully blended.

                - Carefully pour the pumpkin yogurt mixture over the cooled crust, spreading it out evenly with a spatula to ensure even distribution.

                  Prepare the Crumble Topping:

                    - In a small bowl, combine the remaining crust mixture with the chopped nuts. If you're using chocolate chips, feel free to stir them in at this step for added sweetness and texture.

                      - Evenly sprinkle the crumble topping over the layer of pumpkin yogurt, making sure to cover the surface completely.

                        Freeze the Bars:

                          - Cover the baking dish tightly with plastic wrap to prevent ice crystals from forming. Place it in the freezer and let the bars freeze for at least 4 hours or until fully set.

                            Serve:

                              - Once the bars are frozen, carefully remove them from the dish by lifting the edges of the parchment paper, if you used it. Allow the bars to sit at room temperature for about 5-10 minutes to soften slightly, which will make slicing easier.

                                - Cut into squares or rectangles and serve immediately. Any leftover bars can be stored in an airtight container in the freezer for up to 2 weeks.

                                  Prep Time, Total Time, Servings:

                                    20 minutes | 4 hours | 16 bars

Presentation Tips: Serve the bars on a decorative platter, topping each square with a sprinkle of cinnamon or a dollop of whipped cream for a festive touch!
