Ingredients

2 cups Greek yogurt (choose plain or vanilla based on preference)

1 cup fresh raspberries (plus extra for garnishing)

1/4 cup honey or maple syrup (adjust sweetness to your liking)

Zest of 1 lemon (for a bright flavor)

Juice of 1 lemon (freshly squeezed)

1 teaspoon vanilla extract (pure for the best flavor)

Pinch of salt (to enhance sweetness)

1 tablespoon water (to help puree the raspberries)

1/4 cup granola (optional, for a delightful crunch)

Instructions

Prepare the Raspberry Puree:

    - In a small saucepan, bring the 1 cup of raspberries and 1 tablespoon of water to medium heat.

      - Cook for approximately 5 minutes, stirring gently until the raspberries break down and create a syrup-like consistency.

        - Remove from heat and strain the mixture through a fine sieve to filter out the seeds, yielding a smooth raspberry puree. Set aside to cool completely.

          Mix the Yogurt Base:

            - In a medium mixing bowl, combine the Greek yogurt, honey or maple syrup, lemon zest, freshly squeezed lemon juice, vanilla extract, and a pinch of salt.

              - Stir this mixture thoroughly until well blended. Taste and adjust the sweetness according to your preference.

                Assemble the Swirl Rings:

                  - Prepare your silicone ring molds or donut-shaped molds by placing them on a stable surface.

                    - Fill each mold halfway with the yogurt mixture, smoothing the top gently with a spatula.

                      - Next, add a spoonful of the raspberry puree on top of the yogurt layer, and use a toothpick or skewer to swirl it gently, creating a beautiful marbled effect.

                        - Fill the molds to the top with the remaining yogurt mixture, then add a light swirl of raspberry puree on the very top for a striking finish.

                          Freeze the Rings:

                            - Carefully transfer the filled molds to the freezer and allow them to freeze for at least 4-6 hours, or until they are thoroughly solidified.

                              Unmold and Serve:

                                - Once fully frozen, carefully remove the rings from their molds. If they are stubborn, run warm water over the outside of the molds for a few seconds to help release them.

                                  - Serve immediately, garnishing with extra fresh raspberries and a sprinkle of granola if desired to add a crunchy texture.

                                    Store Any Leftovers:

                                      - If you have any leftover yogurt swirl rings, wrap them tightly in plastic wrap or place them in an airtight container to maintain freshness, and return them to the freezer.
