Frozen Yogurt Strawberry Jam Coins

2 cups plain or vanilla Greek yogurt

1 cup fresh strawberries, hulled and finely diced

1/4 cup granulated sugar (adjust to your sweetness preference)

2 tablespoons freshly squeezed lemon juice

1 teaspoon pure vanilla extract

2 tablespoons cornstarch

A pinch of salt

Cooking spray or parchment paper for lining the baking sheet

Instructions
 

Prepare the Strawberry Jam: In a medium-sized saucepan, mix the diced strawberries, granulated sugar, lemon juice, and a pinch of salt. Cook over medium heat, stirring occasionally, for about 5-7 minutes or until the strawberries become soft and release their juices.

    Thicken the Jam: In a small bowl, combine the cornstarch with 1 tablespoon of cold water, stirring until smooth. Pour this mixture into the saucepan with the strawberries, stirring well to combine. Continue to cook for an additional 2-3 minutes, or until the jam thickens to your desired consistency. Remove from heat and allow it to cool completely.

      Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt and vanilla extract. Stir vigorously until the mixture is smooth and well blended.

        Shape the Coins: Line a baking sheet with parchment paper or lightly coat it with cooking spray. Using a tablespoon, scoop the yogurt mixture onto the prepared sheet, forming circles approximately 2 inches in diameter. Aim to create about 12-15 yogurt coins.
