Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing each cup.

    Mix Dry Ingredients: In a spacious mixing bowl, combine the all-purpose flour, rolled oats, packed brown sugar, baking powder, baking soda, fine salt, and ground cinnamon. Whisk these ingredients together until they are fully integrated and there are no lumps.

      Mix Wet Ingredients: In a separate bowl, whisk together the Greek yogurt, milk, vegetable oil (or melted coconut oil), eggs, and vanilla extract. Stir until the mixture is smooth and creamy.

        Combine Mixtures: Gently pour the wet ingredients into the dry mixture. Using a spatula or wooden spoon, fold the mixtures together until they are just combined. It’s perfectly fine if a few lumps remain; do not overmix to ensure fluffy muffins.
