2 cloves garlic, minced

1/2 cup grated Parmesan cheese

1/2 cup extra virgin olive oil

1 large ripe avocado, sliced

1 medium tomato, sliced

1 cucumber, thinly sliced

8 slices of whole grain or sourdough bread

Fresh mozzarella, sliced (optional for added creaminess)

Prepare the Pesto: In a food processor, combine the fresh basil leaves, arugula, nuts, minced garlic, and grated Parmesan cheese. Process the mixture until it's finely chopped. With the processor running, gradually drizzle in the olive oil. Continue blending until the pesto achieves a smooth and creamy consistency. Taste and season with salt and pepper as desired.

    Prep the Vegetables: Slice the avocado, tomato, and cucumber into even pieces to ensure a consistent bite. If you're including fresh mozzarella, slice it into rounds as well.
