12 oz rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 bell pepper (red or yellow), diced

1/4 cup red onion, finely chopped

1/2 cup black olives, sliced

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

4 cloves garlic, minced

1/2 cup extra virgin olive oil

3 tablespoons red wine vinegar

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

1/4 cup grated Parmesan cheese (optional)

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the rotini pasta and cook according to the package directions until it reaches al dente texture. Once cooked, drain the pasta and rinse it under cold water to stop the cooking process and cool it down. Set the pasta aside in a large mixing bowl.
