14 oz firm tofu, pressed and cubed

3 tablespoons olive oil

4 cloves garlic, minced

2 teaspoons dried oregano

2 teaspoons dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

4 whole wheat or spinach wraps

1 cup fresh spinach leaves

1 medium tomato, diced

½ cup cucumber, diced

¼ cup red onion, thinly sliced

½ avocado, sliced

Optional: Hummus or tzatziki sauce for spreading

Prepare the Tofu: Begin by pressing the tofu for at least 30 minutes to eliminate excess moisture, which helps enhance its texture. Once pressed, cut the tofu into even 1-inch cubes to ensure uniform cooking.

    Marinate the Tofu: In a large mixing bowl, whisk together the olive oil, minced garlic, dried oregano, thyme, smoked paprika, and a generous pinch of salt and pepper. Gently add the cubed tofu to the bowl and toss carefully until every piece is evenly coated in the marinade. Allow the tofu to marinate for 15-20 minutes to absorb the flavors.

      Air Fry the Tofu: Preheat your air fryer to 375°F (190°C). After preheating, spread the marinated tofu cubes in a single layer in the air fryer basket. Cook for 15-20 minutes, shaking the basket halfway through cooking to ensure even crispiness, until the tofu turns golden brown and has a delightful crunch.

        Assemble the Wraps: While the tofu is cooking, set up your wraps on a clean surface. For each whole wheat or spinach wrap, spread a generous layer of hummus or tzatziki sauce (if using) right in the center to provide a creamy base.

          Add Fillings: On top of the spread, layer a handful of fresh spinach leaves, followed by the diced tomatoes, cucumber, and red onion. Once the tofu has cooked, remove it from the air fryer and allow it to cool slightly before adding it to your wraps.
