1 can (15 oz) chickpeas, thoroughly drained and rinsed

3 tablespoons extra virgin olive oil

4 cloves of garlic, finely minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon sea salt

¼ teaspoon freshly ground black pepper

4 large whole grain or spinach wraps

1 cup mixed greens (a blend of spinach, arugula, or your favorite lettuce)

½ cup cherry tomatoes, halved

½ cucumber, thinly sliced

¼ red onion, paper-thin sliced

¼ cup feta cheese, crumbled (optional)

¼ cup tzatziki sauce or hummus (for spreading)

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to ensure the chickpeas do not stick and for easier cleanup afterward.

    Prepare the Chickpeas: In a spacious mixing bowl, add the drained and rinsed chickpeas. Pour in the olive oil, followed by the minced garlic, smoked paprika, oregano, thyme, salt, and black pepper. Toss the chickpeas thoroughly until each one is well-coated with the mixture, ensuring every bite is flavorful.

      Roast the Chickpeas: Spread the seasoned chickpeas in a single layer on the lined baking sheet. Pop them into the preheated oven and roast for 25-30 minutes, stirring the chickpeas halfway through the cooking time.
