Ingredients

2 cans (15 oz each) chickpeas, thoroughly drained and rinsed

3 tablespoons olive oil

4 cloves garlic, finely minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

½ teaspoon sea salt

¼ teaspoon ground black pepper

½ teaspoon cayenne pepper (optional, for a spicy kick)

2 tablespoons fresh parsley, finely chopped (for garnish)

Instructions

Preheat the Oven: Set your oven to 400°F (200°C) to ensure it's hot enough for roasting.

Prepare the Chickpeas: After draining and rinsing the chickpeas, spread them onto a clean kitchen towel or paper towel. Pat them dry gently but thoroughly to eliminate any excess moisture, as this will help achieve maximum crispiness during roasting.

Season the Chickpeas: In a large mixing bowl, combine the olive oil, minced garlic, dried oregano, dried thyme, smoked paprika, sea salt, ground black pepper, and cayenne pepper (if you prefer extra heat). Stir the mixture until well blended.

Coat the Chickpeas: Add the dried chickpeas to the bowl with the seasoning mixture. Toss them gently until every chickpea is uniformly coated with the flavorful blend.

Arrange on a Baking Sheet: Transfer the seasoned chickpeas onto a parchment-lined baking sheet, ensuring they are spread out in a single layer for even roasting.

Roast: Place the baking sheet into the preheated oven and roast for 25 to 30 minutes. Be sure to shake the baking sheet halfway through to promote even cooking. Keep a close watch to prevent burning, especially towards the end of roasting.

Cool and Crisp: Once the chickpeas are gloriously golden brown and crispy, remove them from the oven and allow them to cool for about 5 minutes. This cooling period will enhance their crunchiness.

Serve: Garnish the crispy chickpeas with finely chopped fresh parsley. Enjoy them as a delightful snack, or sprinkle them onto salads for an ideal crunchy addition!
