Garlic Lemon Chickpea Wraps

1 can (15 oz) chickpeas, thoroughly drained and rinsed

2 tablespoons extra virgin olive oil

4 cloves of garlic, finely minced

Zest and juice from 1 large lemon

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

4 large whole wheat or spinach tortillas

1 cup baby spinach leaves, washed and dried

1 cup cherry tomatoes, halved

½ cucumber, diced into small pieces

¼ red onion, thinly sliced

Fresh parsley or cilantro, chopped, for garnish

Optional: ½ ripe avocado, sliced for added creaminess

Instructions
 

Prepare the Chickpeas: Heat the olive oil in a medium skillet over medium heat. Add the minced garlic and sauté for approximately 1 minute or until it becomes fragrant, ensuring not to let it brown.

    Season the Chickpeas: Incorporate the drained chickpeas into the skillet. Add the lemon zest, lemon juice, ground cumin, smoked paprika, salt, and pepper. Stir thoroughly to combine all the ingredients, then cook for about 5-7 minutes, allowing the flavors to meld nicely. Once done, remove from heat and let cool for a few minutes.

      Assemble the Wraps: Place the tortillas on a clean, flat surface. Divide the sautéed chickpea mixture evenly among the tortillas, placing it centrally for easy folding.

        Add Fresh Veggies: Layer each wrap with fresh baby spinach, halved cherry tomatoes, diced cucumber, and thinly sliced red onion. For extra creaminess, add a layer of sliced avocado if desired.

          Wrap it Up: Carefully fold in the sides of each tortilla, then roll from the bottom towards the top, creating a tight wrap. Ensure the filling is securely enclosed.
