2-3 tablespoons fresh lemon juice

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x5-inch loaf pan by greasing it with butter or cooking spray and dusting it lightly with flour, or you can line it with parchment paper for easy removal after baking.

    Mix Dry Ingredients: In a medium bowl, combine the all-purpose flour, baking powder, baking soda, salt, and poppy seeds. Whisk the ingredients together until they are well blended, then set this bowl aside.

      Cream Butter and Sugar: In a large mixing bowl, use an electric mixer on medium speed to beat the softened butter and granulated sugar together. Continue beating for about 3-4 minutes, or until the mixture is light and fluffy.

        Incorporate Eggs and Extracts: Crack the eggs into the mixing bowl one at a time, ensuring to mix well after each addition. Then, add the vanilla extract and optional almond extract, mixing until all ingredients are fully incorporated.
