1 medium head of cauliflower, cut into bite-sized florets

3 tablespoons extra virgin olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Sea salt and freshly ground black pepper, to taste

8 small corn tortillas

1 cup red cabbage, finely shredded

1 ripe avocado, diced

1/2 cup fresh cilantro, roughly chopped

1 lime, cut into wedges

1/4 cup crumbled feta cheese (optional)

1/4 cup tahini or your favorite creamy dressing (optional)

Instructions
 

Preheat the Oven: Set your oven temperature to 425°F (220°C) to prepare for roasting.

    Prepare the Cauliflower: In a large mixing bowl, combine the cauliflower florets with the olive oil, smoked paprika, ground cumin, garlic powder, onion powder, sea salt, and black pepper. Toss until the florets are completely coated in the seasoning mix.
