Greek Chicken Orzo Skillet

1 lb (450g) boneless, skinless chicken thighs, diced into bite-sized pieces

1 cup orzo pasta

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, diced

1 cup cherry tomatoes, halved

2 cups low-sodium chicken broth

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and freshly ground black pepper to taste

¼ cup feta cheese, crumbled

Fresh parsley, chopped (for garnish)

Zest and juice of 1 lemon

Instructions
 

Sauté the Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Season the diced chicken thighs generously with salt and freshly ground black pepper. Add the chicken to the skillet in a single layer and cook for 5-7 minutes, turning occasionally, until the chicken is browned and cooked through. Once done, remove the chicken from the skillet and set it aside on a plate.

    Cook the Vegetables: In the same skillet, add the finely chopped onion. Sauté for about 2-3 minutes, stirring frequently, until the onion has softened and turned translucent. Next, add in the minced garlic, diced red bell pepper, and zucchini. Continue to sauté for an additional 3-4 minutes, until all the vegetables are tender and fragrant.

      Add Orzo: Stir the orzo pasta into the skillet, mixing it with the vegetables for about 1-2 minutes. This will allow the pasta to toast slightly and absorb some of the flavors.

        Combine Ingredients: Pour the chicken broth into the skillet, then add the halved cherry tomatoes, dried oregano, dried thyme, lemon zest, and the cooked chicken. Stir all the ingredients together until evenly combined.

          Simmer: Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the skillet with a lid, and let it simmer for about 12-15 minutes. Stir occasionally to prevent the orzo from sticking to the bottom of the skillet. The orzo should be cooked al dente and have absorbed most of the liquid by the end of this time.

            Finish with Cheese and Lemon: Once the orzo is cooked, remove the skillet from heat. Stir in the freshly squeezed lemon juice and crumbled feta cheese. Taste the dish and adjust the seasoning with additional salt and pepper if needed.
