3 large ripe tomatoes, diced into bite-sized pieces

1 medium cucumber, peeled and diced

1 bell pepper (your choice of color), chopped into small squares

1 red onion, thinly sliced into half-moons

1 cup Kalamata olives, pitted and cut in half

200g (about 7 oz) feta cheese, crumbled into large chunks

1/4 cup high-quality extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

Fresh parsley or mint leaves, for garnish (optional)

Instructions
 

In a large, spacious salad bowl, combine the diced tomatoes, cucumber, bell pepper, and thinly sliced red onion. Toss gently to mix the ingredients well.

    Carefully add the halved Kalamata olives to the bowl, ensuring they are evenly distributed among the other fresh vegetables.

      Gently fold in the crumbled feta cheese, using a light hand to avoid breaking the cheese into too small pieces.
