2 medium sweet potatoes, peeled and cubed

1 cup green chili peppers, chopped (choose between mild or hot based on your spice preference)

7 large eggs

1/4 cup milk (or your favorite non-dairy alternative)

1 cup fresh spinach, roughly chopped

1/2 cup red onion, diced

1 cup shredded cheese (cheddar or pepper jack for a spicy kick)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to get it ready for the frittata.

    Cook the Sweet Potatoes: In a large oven-safe skillet, heat the 2 tablespoons of olive oil over medium heat. Add the cubed sweet potatoes, cooking them for about 10-12 minutes. You want them to become tender and golden brown, so stir occasionally to avoid sticking.

      Add Onion and Green Chili: Once the sweet potatoes are nearly done, add the diced red onion and chopped green chili peppers to the skillet. Continue to cook for an additional 3-4 minutes, or until the onions become translucent.

        Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs, milk, garlic powder, smoked paprika, and a pinch of salt and pepper until the mixture is well combined and fluffy.
