1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

2 ripe peaches, pitted and cut into wedges

1 medium red onion, cut into chunks

1 red bell pepper, cut into squares

3 tablespoons extra virgin olive oil

2 tablespoons honey

1 tablespoon balsamic vinegar

2 cloves garlic, minced

1 tablespoon fresh thyme, finely chopped (or 1 teaspoon dried thyme)

Salt and freshly ground black pepper, to taste

Skewers (if using wooden skewers, soak them in water for 30 minutes prior to use)

Marinate the Chicken: In a large mixing bowl, combine the extra virgin olive oil, honey, balsamic vinegar, minced garlic, chopped thyme, and a generous pinch of salt and pepper. Stir well to create a uniform marinade. Add the chicken cubes, ensuring they are evenly coated. Cover the bowl with plastic wrap and refrigerate for a minimum of 30 minutes to allow the flavors to meld (for an even bolder taste, marinate for up to 2 hours).

    Prep the Grill and Skewers: After marinating, preheat your grill to medium-high heat. If you’re using wooden skewers, ensure they have soaked for 30 minutes to prevent them from burning during grilling.
