Grilled Chicken Bruschetta Pasta

8 oz (225g) spaghetti or penne pasta

2 boneless, skinless chicken breasts

2 cups cherry tomatoes, halved

1 cup fresh basil leaves, chopped

3 cloves garlic, minced

1/4 cup balsamic vinegar

1/4 cup olive oil (plus 2 tablespoons for bruschetta topping)

1 teaspoon dried oregano

Salt and freshly ground black pepper to taste

Freshly grated Parmesan cheese, for garnish

Instructions
 

Cook the Pasta:

    In a large pot, bring salted water to a rolling boil. Add the spaghetti or penne pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta in a colander and set aside.

      Marinate the Chicken:

        In a medium bowl, whisk together the balsamic vinegar, 1/4 cup olive oil, minced garlic, dried oregano, and a pinch of salt and pepper. Place the chicken breasts into a resealable plastic bag or a shallow dish and pour the marinade over them. Ensure the chicken is fully coated. Seal the bag or cover the dish and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more intense flavor.

          Grill the Chicken:

            Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade, allowing any excess to drip off.
