2 boneless, skinless chicken breasts

2 ripe peaches, sliced into wedges

4 cups mixed salad greens (arugula, spinach, and romaine)

1/2 cup feta cheese, crumbled

1/4 cup red onion, thinly sliced

1/4 cup toasted pecans or walnuts

Salt and black pepper, to taste

Olive oil, for brushing on the chicken and peaches

For the Dressing:

1/4 cup balsamic vinegar

2 tablespoons honey

3 tablespoons extra-virgin olive oil

1 teaspoon Dijon mustard

Salt and black pepper, to taste

Marinate the Chicken: In a medium bowl, combine 2 tablespoons of olive oil, a generous pinch of salt, and freshly cracked black pepper. Add the chicken breasts and ensure they are fully coated in the mixture. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.

    Prepare the Dressing: In a small mixing bowl, whisk together the balsamic vinegar, honey, olive oil, Dijon mustard, and a pinch of salt and pepper. Blend until the dressing is smooth and well combined. Taste and adjust the seasoning if needed, then set aside.

      Grill the Chicken: Preheat your grill over medium heat (about 350°F/175°C). Once heated, place the marinated chicken breasts on the grill. Cook for 6-7 minutes on each side, or until the chicken is thoroughly cooked, reaches an internal temperature of 165°F (75°C), and has beautiful grill marks.
