Grilled Corn and Avocado Salsa

4 ears of fresh corn, husked

2 ripe avocados, diced into bite-sized pieces

1 medium red onion, finely chopped

1 cup cherry tomatoes, halved

1 jalapeño, seeded and minced (adjust according to your spice preference)

1/4 cup fresh cilantro, roughly chopped

Juice of 2 fresh limes

3 tablespoons extra-virgin olive oil

Salt and pepper to taste

Optional: 1 teaspoon smoked paprika for an added depth of flavor

Grill the Corn: Preheat your grill to medium-high heat. Once heated, place the husked corn directly onto the grill grates. Grill the corn for approximately 10-15 minutes, turning every few minutes until the kernels are nicely charred and tender. Once done, remove the corn from the grill and allow it to cool completely.
