Grilled Peach & Burrata Salad

2 ripe peaches, halved and pitted

8 oz burrata cheese

4 cups fresh arugula or mixed greens

1/4 cup balsamic glaze

1/4 cup high-quality extra-virgin olive oil

1/4 cup pistachios, toasted and roughly chopped

A handful of fresh basil leaves, torn

Salt and freshly ground black pepper to taste

Optional: A pinch of red pepper flakes for a spicy kick

Preheat the Grill: Start by preheating your grill to medium-high heat. Make sure the grates are well-cleaned and lightly coated with oil to prevent food from sticking.

    Prepare the Peaches: While your grill heats up, rinse the peaches under cool water. Using a sharp knife, slice each peach in half and carefully remove the pit.

      Grill the Peaches: Once the grill is hot, place the peach halves cut-side down directly on the grill. Grill for about 4-5 minutes until you see impressive grill marks and the peaches begin to soften. Afterward, flip the peaches over and grill for an additional 1-2 minutes before removing them from the grill. Let them cool slightly before handling.
