Grilled Peach & Chicken Caprese Melts

2 ripe peaches, halved and pitted

2 boneless, skinless chicken breasts

4 oz fresh mozzarella cheese, sliced

1 cup cherry tomatoes, halved

1 cup fresh basil leaves

2 tbsp balsamic glaze

2 tbsp olive oil

1 tsp garlic powder

Salt and black pepper, to taste

4 slices of ciabatta or sourdough bread

1 tbsp butter, softened for grilling

Prepare the Chicken: In a mixing bowl, drizzle the chicken breasts with olive oil and sprinkle with garlic powder, salt, and black pepper. Ensure an even coating by rubbing the seasonings into the meat. Heat a grill pan over medium-high heat. Once hot, add the seasoned chicken and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the center. Remove from the grill and let it rest for 5 minutes before slicing thinly across the grain.

    Grill the Peaches: While the chicken is resting, take the halved peaches and place them cut side down on the preheated grill. Grill for approximately 3-4 minutes until you see beautiful grill marks and the peaches are slightly softened. Remove them from the heat and slice each half into thinner wedges for easy layering.

      Assemble the Melts: Take one slice of bread and lay down a generous layer of sliced grilled chicken. Top with fresh mozzarella slices, followed by the grilled peach wedges, and halved cherry tomatoes. Scatter a few fresh basil leaves on top, and drizzle with balsamic glaze for a zesty finish. Finally, place another slice of bread on top to complete the sandwich.

        Grill the Sandwiches: Preheat a clean pan over medium heat. While it heats, spread softened butter on the outer sides of each sandwich. Once the pan is sizzling, place the sandwiches inside, grilling them for about 4-5 minutes on each side.
