Grilled Teriyaki Salmon Skewers

Ingredients
  

1 lb salmon fillet, skinless, cut into 1-inch cubes

1/4 cup soy sauce

1/4 cup mirin (sweet rice wine)

2 tablespoons brown sugar

1 tablespoon sesame oil

2 garlic cloves, minced

1 teaspoon freshly grated ginger

1 tablespoon rice vinegar

1/4 teaspoon black pepper

1 bell pepper, cut into 1-inch squares (any color works well)

1 medium red onion, cut into 1-inch pieces

1 cup pineapple chunks (fresh or canned, drained if using canned)

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes to prevent burning)

Instructions
 

Prepare the Marinade: In a medium mixing bowl, combine the soy sauce, mirin, brown sugar, sesame oil, minced garlic, grated ginger, rice vinegar, and black pepper. Whisk the mixture until the sugar dissolves and the marinade is well blended.

    Marinate the Salmon: Place the salmon cubes into a resealable plastic bag or a shallow dish. Pour half of the prepared marinade over the salmon, ensuring each piece is thoroughly coated. Seal the bag or cover the dish with plastic wrap, then refrigerate for a minimum of 30 minutes and up to 2 hours to allow the flavors to meld.

      Prepare the Vegetables: In a separate bowl, toss the bell pepper squares, red onion pieces, and pineapple chunks together. Drizzle the remaining marinade over the vegetable mix and gently stir to ensure all pieces are coated evenly.

        Assemble the Skewers: Preheat your grill to medium-high heat. Thread the marinated salmon cubes, followed by alternating with bell pepper squares, red onion pieces, and pineapple chunks onto the skewers, creating a colorful mix on each skewer.
