Grilled Veggie Quinoa Bowls

1 cup quinoa, thoroughly rinsed

2 cups vegetable broth or water

1 red bell pepper, sliced into strips

1 zucchini, sliced into rounds

1 yellow squash, sliced into rounds

1 cup cherry tomatoes, halved

1 red onion, sliced into thin wedges

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

½ cup feta cheese, crumbled (optional)

Fresh parsley, chopped, for garnish

Juice of 1 lemon

Cook the Quinoa: In a medium saucepan, bring the vegetable broth (or water) to a rolling boil. Add the rinsed quinoa, stir briefly, then reduce the heat to low. Cover the pot and let it simmer for 15 minutes or until all the liquid is absorbed. Once cooked, remove it from heat and let it sit, still covered, for 5 minutes. Fluff the quinoa gently with a fork before serving.

    Prepare the Vegetables: While the quinoa is cooking, preheat your grill or grill pan over medium-high heat. In a large mixing bowl, combine the sliced red bell pepper, zucchini, yellow squash, halved cherry tomatoes, and onion wedges. Drizzle the olive oil over the vegetables, then season with garlic powder, smoked paprika, salt, and pepper. Toss the mixture until all the veggies are evenly coated in the oil and spices.

      Grill the Veggies: Once your grilling surface is hot, add the seasoned vegetables. Grill them for approximately 5-7 minutes, turning occasionally with tongs, until they are slightly charred and tender. Once grilled to your liking, remove the vegetables from the heat and set them aside.

        Assemble the Bowls: To serve, take individual bowls and start by adding a generous scoop of the cooked quinoa as the base. Next, artfully layer the grilled vegetables on top. If desired, add a sprinkling of crumbled feta cheese for an added burst of flavor.
