Grilled Zucchini and Halloumi

2 medium zucchinis, sliced into ½-inch rounds

8 oz halloumi cheese, sliced into ½-inch thick pieces

3 tablespoons olive oil, divided

1 tablespoon balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

Fresh mint leaves, for garnish

Lemon wedges, for serving

Instructions
 

Marinate the Zucchini: In a medium-sized bowl, whisk together 2 tablespoons of olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and pepper. Add the zucchini slices to the bowl and gently toss them until they are evenly coated with the marinade. Allow the zucchini to marinate for at least 15 minutes to absorb the flavors.

    Prepare the Halloumi: While the zucchini is marinating, brush both sides of the halloumi slices with the remaining 1 tablespoon of olive oil. Set aside.

      Preheat the Grill: Preheat your grill or grill pan to medium-high heat until it’s hot, ensuring a good sear on the vegetables and cheese.

        Grill the Zucchini: Once the grill is hot, place the marinated zucchini slices on it. Grill for about 3-4 minutes on each side, or until the zucchini is tender and marked with beautiful grill lines. Remove the grilled zucchini from the grill and set aside on a plate.

          Grill the Halloumi: Next, place the oiled halloumi slices on the grill. Grill for approximately 2-3 minutes on each side, or until the cheese turns a golden brown and softens slightly. Keep an eye on it to prevent it from melting too much.

            Assemble the Dish: On a large serving platter, arrange the grilled zucchini slices and halloumi slices in an appealing manner. Drizzle any remaining marinade over the top to enhance the flavor profile.

              Garnish and Serve: Finish by sprinkling fresh mint leaves across the dish, adding both a burst of color and a refreshing herbal note. Serve immediately with lemon wedges on the side, allowing guests to squeeze fresh lemon juice over the top for added tanginess.
